- cherry tomatoes — the sweeter, the better! Mini tomatoes come in many varieties, including grape, strawberry and heirloom. I used one package each of classic cherry tomatoes, and one package of cherry tomato on the vine.
- Feta: You’ll want to buy a better quality Greek feta, as it is the main flavor in the dish. You want a block of feta. Not the crumbles. French feta is milder and creamier than Greek feta.
- olive olive oil Most recipes I’ve seen use anywhere from 1/4 to 1/2 cups of olive oil. 1/3 cup was enough to coat the tomatoes with feta and have a little oil pool in the bottom of the baking dish. This allows the tomatoes to do a type of tomato confit. You will see your tomatoes dry out if you use too much olive oil.
- Pasta – You can use any shape, we tried casarecce and rotini both and they were delicious.
- garlic: A couple of cloves of minced garlic mixed in with the tomatoes. The residual heat from the tomatoes tempers the garlic’s sharpness while still providing a big hit of garlicky goodness.
- basil fresh basil and tomatoes make a great pairing. You can slice them up and stir in, or you can keep some leaves whole for garnish!
